ripens slowly
Less heat, more fog, cold nights. The fruit takes longer to ripen and concentrates more sugar. That's what produces a clean, sweet, and bitter-free cup. It's not marketing: it's the physical reason why high-altitude coffee costs more.

We don't mix with grains from other farms or other countries. What's in the bag grew on the same hillside, in the same year, under the same shade trees.

Nubín plants, harvests, processes, and roasts. There are no intermediaries to dilute the quality or take the farmer's profit margin.
Toasted to order
We roast in small batches when your order comes in. The coffee you receive came from the roaster days ago, not months ago in a warehouse.
